Strawberry Mousse

This mousse is creamy, light and high in plant based protein, a recipe perfect for days when you are craving something sweet. This dessert remind me of my childhood, which was filled with endless amounts of “Petit-Suisse” as a snack, or small flavored yogurt cups. It is completely plant-based, free of refined sugars and gluten-free.

Here is the recipe:

Ingredients:

  • 50g cashews (soaked)
  • 5 natural pitted dates (soaked)
  • 100g organic natural tofu
  • 110g strawberries
  • Optional: 1 tsp of vainilla powder & 2 tsp of nutritional yeast

Preparation:

  • Soak the cashews and the dates in hot water (minimum 1 hour).
  • Drain and add them to a blender alongside the other ingredients. Blend until a homogenous texture is reached.
  • Add the blend to small cups & let it cool in the fridge for minimum 4-5 hours.
