Coconut Chia Pudding

The perfect tropical, lazy breakfast…high in plant based omega 3s, protein, probiotics and healthy fats to support your brain and gut health. I love making this recipe when traveling as it is extremely easy to carry and fills me up for a long time. Let me know if you try it out!

Here is the recipe:

Ingredients:

  • 3 tbsp chia seeds
  • 5 tbsp coconut yogurt (I eyeball it)
  • 1 tsp Ceylon cinnamon
  • Optional: 1 tsp maca powder & 1 tsp of vainilla powder
  • A splash of plant based milk or coconut yogurt
  • Toppings: nectarine slices, pecans, coconut shred and almond butter

Preparation:

  • In a bowl/cup, mix all the ingredients together (except the toppings and the plant based milk) and refrigerate for 1-2 hours minimum, or until the mixture becomes gelled.
  • Once reached a gelled consistency, add a splash of plant based milk and/or coconut yogurt until your desired consistency is reached.
  • Add your favourite toppings & enjoy!
