French Toast

What is more comforting than a classic french toast? I remember being a child and always asking my mom to make them for me. We would call them “panqueques de mentira,” which means fake pancakes…don’t ask me why haha!

This recipe is perfect for the days in which you are craving a sweet & comforting breakfast. As always, it is plant based, gluten free & refined sugar free. Let me know if you try it out!

Here is the recipe:

Ingredients:

  • 1 banana
  • 1 tbsp chia seeds
  • 1 tsp vainilla
  • 1 tsp Ceylon cinnamon
  • 1 cup of plant based milk
  • 1 tbsp coconut oil
  • 2 slices of gluten free bread
  • Toppings: homemade berry chía jam, coconut yogurt, hemp seeds and date syrup

Preparation:

  • Blend the first five ingredients in a blender until smooth.
  • Heat a pan over medium heat with the coconut oil.
  • Transfer the mixture to a sufficiently wide bowl and soak the slices of bread in the milk mixture (max. 5 seconds per side).
  • Add the bread to the pan and toast for around 30 seconds to 1 min on each side, or until golden brown.
  • Serve them on a plate with your favourite toppings!
